This recipe came from one of mom’s cookbooks and had a note written beside it, “Grace adds baking powder” but I’m not sure if its the recipe mom always used. When I made sand tarts after 20 yrs and couldn’t find the recipe I always used, I used this one (with the baking powder addition) and it was good.
I cut the recipe in half (it called for 8 cups flour and a pound of butter!) and it fills my cookie jar, while taking about half the time to roll out and bake.
1/2 LB butter
4 cups flour
1 1/2 tsp vanilla
2 cups sugar
3 eggs
1 tbl baking powder (optional)
Work butter and flour together so the butter pieces are about the size of peas. Beat eggs and add the remaining ingredients to the flour & butter mixture. Chill.
Roll out to 1/8 inch thick and cut with cookie cutters. Brush with lightly beaten egg white and sprinkle with cinnamon sugar and sliced almonds, colored sugar, or sprinkles.
Back at 375 until lightly browsed, about 7 – 8 minutes.
