Pumpkin Bars

This recipe is a family favorite. I discovered 20 years ago when we lived in Maine and had a large pie pumpkin patch.

1 pkg spice cake
1/2 c butter, melted
3 eggs
1 c pumpkin
1/2 c sugar
dash of salt

Reserve 2/3 cup dry cake mix.

In large bowl, combine remaining cake mix, butter, and 1 egg; mix well. Pat into greased 13x9x2 inch cake pan.

Bake at 350 degrees for 15 min.

Combine reserved cake mix, pumpkin, sugar, 2 eggs, orange peel. and dash of salt. Beat at medium speed with electric mixer for 1 to 2 min. Pour over partially baked layer. Top with nuts.

Bake at 350 degrees until set, 15 to 20 minutes. Cool; cut into bar refrigerate.

Makes 32.
